Preheat your pan or griddle. Get it ready now. We’ll be throwing batter on there in no time.
2 c. whole wheat flour
3 tbsp. brown sugar
4 tsp. baking powder
1 tsp. salt
2 cups milk
1 tsp. vanilla
2 eggs
6 tbsp. unsweetened applesauce
Mix the dry first. Mix the wet in a bigger, separate bowl. Mix the dry into the wet. It will be a little lumpy. Melt a little butter in the pan or on your griddle. That’s really a fantastic word, “griddle.” It makes me smile every time I say it. About 1/3 cup makes one decent pancake. Smaller if you’re a wimp, bigger if you have the space and something to prove.
Cook until bubbles appear on top. Flip. Wait a minute or two. It’s done. That’s it. Get out the peanut butter and strawberries.
